The title speaks for itself.
Itās mostly an issue when thereās nothing but LaTeX code in an item. That makes it hard to tell whatās going on.
Maybe you can target LaTeX rendering output inside a completed item with some CSS and have a grey line go across it.
This might be tricky to align with the actual strike-through of any surrounding text.

Youāre right, this is indeed the trickiest part. The various little elements LaTeX simply donāt align at all. Weāll see what we can do!

Out of curiosity, in what case would you complete an item with LaTeX only?
I was thinking of just a line across a LaTeX block independent of whatās in it, not striking through the LaTeX contents āproperly.ā

Not sure if thatās possible with CSS (or have you experiemented with it?), but weāll try.
I meant more like why would you cross out an equation. Is it for marking the equation as ālearnedā or āstudiedā?
