The ability to share a folder disappears if you share a document from this folder

That sounds like intended behavior

The permissions you apply to the folder will get applied to all the documents in that folder

So I suppose the alternative was to allow folder permission changes which will overwrite all document permissions, and they chose not to do design it that way, since people might not realize what theyve done.

They probably could have designed better warnings about why you need to delete all document permissions before it allows setting them folderwide
