I’d like to be able to use Markdown (or some other type of code) to make headings, e.g. H1, H2, H3. Obviously the usual command does not work because of the tagging feature.
Can someone please tell me how to apply the heading tag via text?

Unfortunately there’s no way to apply heading via text right now.

You can set up custom shortcuts for making headings though, which is probably as fast as typing out the hashes.
You can make a feature request if you really want to convert an item into heading via typing text.
